{"id":16093,"date":"2025-08-11T10:03:49","date_gmt":"2025-08-11T10:03:49","guid":{"rendered":"https:\/\/wcspltd.co.uk\/?p=16093"},"modified":"2025-08-11T10:06:09","modified_gmt":"2025-08-11T10:06:09","slug":"scallops-parpadelle-pasta","status":"publish","type":"post","link":"https:\/\/wcspltd.co.uk\/fr\/scallops-parpadelle-pasta\/","title":{"rendered":"Scallops &#038; Parpadelle pasta"},"content":{"rendered":"<p>Ingredients:<\/p>\n<p>225g Cherry tomatoes<br \/>\nOlive oil<br \/>\n1 clove of garlic<br \/>\n3 sprigs Thyme<br \/>\n1 shallot, finely chopped<br \/>\n10 strands saffron<br \/>\n100ml Vegetable or Fish stock<br \/>\n200ml white wine<br \/>\n200ml double cream<br \/>\nChives<br \/>\n500g pasta of your choice<br \/>\n250g King Scallops (or mix it up with a white fish of your choice)<\/p>\n<p>&nbsp;<\/p>\n<p>Instructions:<\/p>\n<ul>\n<li>Preheat the oven to 200 degrees, put cherry tomatoes on a baking tray drizzle olive oil over and add salt &amp; pepper. Add garlic and thyme and roast for 10-15 minutes<\/li>\n<li>Fry shallots and saffron in olive oil until soft, add stock and wine &#8211; bring to the boil and simmer until reduced by half.<\/li>\n<li>Strain liquid into clean pan and add cream. Simmer until thickened. Stir in chives. Meanwhile cook pasta.<\/li>\n<li>Drain and toss in diced tomatoes.<\/li>\n<li>Season scallops with salt &amp; pepper and then it&#8217;s time to fry! Place the largest one at 12 o\u2019clock on a \u2018clock face\u2019, and then continue with the next largest at 1 o\u2019clock and so on. This ensures they are all cooked evenly as the largest ones will have the extra wee bit of time in the pan.
