Queen Scallop meat retain their quality when frozen. They are easy to defrost when needed. The queenie season is closed between March and June meaning only frozen produce is available.
The roe on a Queen Scallop has a stronger flavour and a different texture to the white meat. Although it’s not to everyone’s preference, the roe can add a great flavour to your scallop dishes.
