Cook & Operator – Skipper’s Scran Van – Dumfries and Galloway
40 hours every week
6 month contract with opportunity for extension
£13.00 per hour thereafter
1.5x hourly overtime rate
West Coast Sea Products are looking for a passionate individual to join the Dumfries and Galloway team to support the growth of the business. The successful candidate will be working primarily in Skipper’s Scran Van as well as occasional shifts in Swally n’ Scran. Skipper’s scran van work is seasonal from April to the end of September. There will be opportunities for work after September in another area of the business.
Skipper’s Scran Van has built up a great reputation in Kirkcudbright so we are looking for the right candidate to take lead this season. We will be running two menus throughout the summer with occasional catch of the day specials.
Our core objectives & goals:
• To provide a friendly, bubbly and personal experience with customers
• To serve delicious high quality and fresh seafood made to order
• To sell the best sea food in Kirkcudbright at affordable cost
The role includes, but is not limited to, the following responsibilities:
• Being responsible for the food unit
o Hygiene & Cleanliness
o Keeping the trailer fully equipped and organised
o Making manager aware of issues and maintenance
o Security of trailer
• Ordering
o Including gas, oil & condiments
o Drinks
o Food packaging
o Equipment & essentials e.g. cleaning products
• Preparing the food trailer prior to service
• Preparing food prior to service
• Assisting chef is serving and plating all food for Skipper’s Scran Van food service
o A keen eye for presentation
o Ensuring food served is correctly heated as per food and safety guidelines
• Operating the deep fat fryer
• Record keeping (e.g. Temperature & cleaning records)
• Full clean down and packing away trailer after service
• Dealing with unsold produce to achieve zero to minimal waste
• Ensuring all equipment is washed and returned
• Driving to and from trailer stance/event with produce
Other roles that will be expected on occasion:
• Prepping fish for sale in fishmonger and restaurant
• Ad hoc work in Swally n’ Scran assisting the chefs in service times
Hours of work:
• Skipper’s Scran van will be open Wednesday & Thursday (4:30 – 7:30) and Friday and Saturday (12 – 7:30)
• Clean down days (Monday or Tuesday)
• Prep hours will some what flexible. Can be discussed
• The trailer will attend occasional events through the calendar year so staff must expect some travel within their role. Additional jobs required in preparation for events
Essential Skills & Experience
• Experience working in food preparation
• Working in a kitchen environment
• Cooking seafood
• Must hold a full UK driving licence with no major endorsements.
• Strong people skills – we offer a close and friendly service and pride ourselves on repeat business. With the nature of a food truck good customer service must be at the heart of all employees to provide a positive customer experience.

• Previous experience of driving a van (If no experience, willing to learn/train)

Progression
The Scran van will close again in September. The will be opportunities arise for the successful candidate to take on a new contract in another area of the business.

Scallop Cutting Staff
(Immediate start)
West Coast Sea Products Ltd are recruiting for Scallop Processing Operatives (Cutters) to join its experienced & dedicated cutting team, working on a piece rate basis.
No previous experience is necessary; however, the applicant would benefit from being a quick learner and good at working in a hands-on environment. We are looking for candidates who have the desire to learn and develop new and existing skills, and have a flexible attitude towards work.
Wages:
The rate of pay for the first 4 weeks is £11.50 per hour to allow for candidate training on scallop cutting. Thereafter you will work on a piece rate basis, meaning you will be paid for the kg weight of scallops cut. Scallop cutters currently working on a piece rate basis on average are earning between £12-£15 per hour (the top tier cutters today are earning approx. £90 for 5.5hrs work).

Self-employed Share Fishers
Our fleet of Scallop boats fish around the UK and we require self-employed deckhand share fishers. Our boats are currently working out of Kirkcudbright, The English Channel and The North Sea.
Working under the watch of The Skipper, we are looking for fishers who are team players, and who have a desire to learn and develop new and existing skills, with the potential to train as Officer of the Watch with progression to training towards your Skipper Ticket. Fishers must have a flexible attitude towards work.
Full training will be provided, experience is preferred although not essential.
