Local Kirkcudbright Fisherman Ian Clark is an expert in fishing for Lobsters. He uses lobster creels along the Kirkcudbright coastline throughout the year to catch the distinctive European Lobster, identified by it’s blue-black shell which turns red once cooked.
Lobster has a beautiful, sweet flavour and has plenty of delicious meat in the tail, body and claws.
Lobsters are landed on the day of delivery so will be live when they reach you. Once you have received your live lobster they will stay alive for around 2 days and are best kept refrigerated with damp newspaper over them. Lobsters must be cooked whilst they are still alive as they deteriorate quickly once they die. Once cooked, lobster must be consumed within 2 days.
It is possible to freeze cooked lobster, however it will not retain the same quality as when fresh.
